How To Make Swiss Chalet French Fries?

I love French fries from Swiss Chalet. Does anyone know the recipe for them. I know they are fresh cut russet potatoes, but
to they soak them in water or blanch them before frying? They must do something to them. If anyone knows or if you have worked there, please let me in on their secret.

No, I am a former chef and had friend who worked for them and Harveys, they use the same pototos, it is not a water blanch but an oil blanch at 300 degrees for 3-4 minutes and then drained, cooled and when they cook them for an order they are re-fried to brown at 360 d F, a mid-range temp as most places either cook high at 375 or 350, I made them like this and worked with a friend who did a water blanch our in a water was, chix based and potato starch broth and they were shoestring, both way pre cook the potatos, and ready’s them for the final fry, you can do it at home in a home fryer the same way, the fryer fat they use at Swiss Chalet/Harvey and all of Cara’s operations is a company blend of canola, soya and veg oils, regular canola oil is fine for home use.
